Smucker Company to use their new peanut butter powder in a recipe, we knew exactly what we wanted to try: peanut butter Rolo cookies! They are a breeze to make with just 5 ingredients, most of them are probably already in your pantry. Grab the powder at Walmart if not! And they’re fast so you can have warm cookies in your belly in the first 15 minutes of gathering your supplies. Win-win!
The ingredients and instructions are nearly identical to our original crazy chocolate caramel cookies but you add a little peanut butter powder. Yes, powder. That’s one less thing to wash in the sink, sticky peanut butter gunking up your spoon! This powder is a faster yet still flavorful alternative and bonus: it has 85% less fat than traditional peanut butter; 7-9 grams of protein per serving. It’d be a great addition to your morning smoothie, yum!
I n g r e d i e n t s:
- 1 box of yellow cake mix
- 3 tbsp Jif peanut butter powder
- 3 packs Rolo candies
- 1/2 cup oil
- 2 large eggs
D i r e c t i o n s:
- Heat to 350.
- Combine cake mix, powder, oil and eggs. Blend well.
- Roll a tablespoon size of dough into a ball (use a little oil on your hands if sticky).
- Place a Rolo in the center of a cookie dough ball, fold the dough in a ball around the Rolo and re-roll.
- Note: this yields 24 cookies.
