Our Rolo cookies are our number one top-pinned recipe and if you’ve made them, you’ll know why. We’ve been wanting to experiment with other stuffed cookies since then and since our favorite treat has anything to do with peanut butter, we thought shoving a spoonful in our chocolate cake mix cookies was a winning idea. Let me tell you…these peanut butter stuffed chocolate cookies are bomb.com. They’re even better the next day although they barely lasted that long! Today we’re teaming up with Eggland’s Best to share their Chief Egg Officer contest. So scroll down for both the recipe and the contest details! Our favorite recipe is on that takes very little work. We prefer to play with paint and tools so recipes that are quick and easy are more appealing. All you need for this amazing cookie is a cake mix, a couple of quality eggs and a few other staples you’ll have on hand.
Peanut Butter Stuffed Chocolate Cookies
Ingredients
- 1 box of chocolate cake mix
- 1/2 cup oil
- 2 eggs
- 1/2 cup peanut butter
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350.
- In first bowl, mix cake mix oil and eggs until dough consistency.
- In second bowl, mix peanut butter and powdered sugar until dough consistency.
- Roll 24 teaspoon sized peanut butter balls and place on wax paper.
- Scoop chocolate dough into largers balls then shape like a bird nest, place peanut butter ball inside and cover with chocolate dough.
- Place stuffed dough onto greased cookie sheet by the dozen and bake for 7 minutes.
