Pink Ombre Whoopie Pie Cookies
October is nearing an end and we couldn’t ignore the fact that it’s Breast Cancer Awareness month. We shared these yummy pink whoopie pie cookies where we contrib, Creative Home by Mohawk Floors earlier this month. We have all lost a loved one because of cancer but also have some success stories too. Our Aunt Mar June beat breast cancer and so did Kelli’s Aunt Tammy, take that cancer!! It’s a great time to share some whoopie pies with a friend, whether it’s a success cookie or a hope cookie, these fun pink ombre cookies will bring a little happiness. Bonus, it’s an easy cookie recipe since you’re using a box mix, you know how much we love mix cookies! The frosting is a breeze too since you can whip up your own or take a short cut and use a can (;
Ingredients:
Whoopie Pies:
classic white cake mix
1/2 cup butter
1 egg
red food coloring
mixing bowls
Filling:
1 cup butter (softened)
3 1/2 cups powered sugar
1 tsp vanilla
red food coloring
Optional: canned vanilla frosting
Make these easy pink whoopie pies in honor of cancer awareness!
Baking Instructions:
Whoopie Pies:
Preheat the oven to 350 degrees.
Combine all ingredients and mix with hand mixer or by hand until dough forms.
Separate the dough into two bowls.
In one bowl, add 5 drops of food coloring. Mix well.
In the second bowl, add 8 drops of food coloring. Mix well.
Drop 2″ balls of dough onto cookie sheet, you’ll have 12 balls per sheet.
Bake at 350 degrees for 6 minutes, pull out sheet and let cool on sheet.
Filling:
Separate frosting into 3 bowls.
Bowl one: add a scoop of vanilla which is the white frosting.
Bowl two: add 2 drops of food coloring, mix well.
Bowl three: add 5 drops of food coloring, mix well.
When cookie are cooled, add a spoonful of filling between 2 cookies to create a “pie”.
