Oatmeal Sandwich Cookies

We can’t get enough of our Nana’s cookbook and have been trying to replicate all her recipes. These sweet treats and easy to make and the fluffy frosting filling is the perfect way to top off these chewy oatmeal cookies.

How to Make Oatmeal Sandwich Cookies

My husband is addicted to the store bought oatmeal cream pies so when I make these, he always hide a few and takes them to work to snack on for a couple days (like they last that long!). These are much more filling and one cookie satisfies a sweet tooth!

Cookies
  1. Preheat oven to 350°.
  2. Cream shortening and brown sugar until light and fluffy.
  3. Beat in eggs and vanilla.
  4. In another bowl, whisk the next ingredients; gradually beat into creamed mixture.
  5. Stir in oats.
  6. Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets.
  7. Bake until golden brown, 8-10 minutes.
  8. Remove to wire racks to cool.
Filling
  1. Combine and mix until creamy and soft.
  2. Spread filling on the bottoms of half of cooled cookies; cover with remaining cookies.

Don’t over bake them! They’re so good soft and chewy, especially with the fluffy filling!

Ingredients

  • Cookies
  • 1 1/2 cup Shortening
  • 2 cups Flour
  • 1 teaspoon Salt
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Vanilla
  • 2 teaspoons Cinnamon
  • 4 Eggs
