Lime Curd Sugar Cookie Cups

Hi! It’s Yvonne again from TriedandTasty.com and I’m bringing you another delicious recipe this month! I’ve got a thing for sugar cookie cups (if you haven’t noticed) and was eager to jump on the chance to make another great holiday version! If you haven’t nailed down your dinner menu quite yet I would highly recommend my Corned Beef Braid or Reuben Swirl Rolls! Both would be great for lunch or dinner, then make these darling Lime Curd Sugar Cookie Cups for dessert!

I’m a MAJOR fan of lime (and lemon). SO I guess I could say I’m a citrus lover of sorts! Did you see my Lime Swig Style Sugar Cookies that I contributed last month? They are a must see – so definitely check them out! For this months sweet treat I took things back to ‘mini’ style, which is one of my favorite ways to enjoy a sweet treat. I like to think that I’ll stop at just one or two so they are the perfect size. Then I realize they are so yummy that I can’t stop eating them and realize that sometimes mini treats make me eat more! So that’s where my self control needs to come in to play. If you like lime, give these a try!

Lemon Curd Sugar Cookie Cups

These delicious little treats are perfect for St. Patrick's Day! They are mini, fit right in the palm of your hand, and will be gobbled up in no time. With the tiniest hint of coconut, you'll be left wanting more!

Ingredients

  • 2 16.5 oz pkgs. refrigerated sugar cookie dough
  • 8 oz. cream cheese softened
  • 1 c. cream of coconut
  • 1/4 c. powdered sugar
  • 1 tsp. vanilla
  • 1 c. fresh whipped cream you can use cool whip, if you prefer
  • Lime Curd

Instructions

  • Preheat oven according to package directions. Grease a mini muffin pan lightly with cooking spray. Add 1 rounded tbsp. of dough to each muffin tin. Bake 7-9 minutes. Cool completely. Center should sink immediately, if not, gently press center to create a cavity. Beat together the cream cheese, cream of coconut, powdered sugar and vanilla until well incorporated. Fold in fresh whipped cream. Use a piping bag or spoon to fill cookie cups with cream. Drizzle with lime curd. Refrigerate until ready to serve.
