Creamy Avocado Salsa
There is a little fresh Mex restaurant in the town that I l live in. The restaurant is tucked behind some bigger stores so if you aren’t looking for it, you won’t notice it. If you would have asked me when it first opened how long I thought it would last, I would have told you there is no way it will make it past a year since a lot of prior businesses to this one had come and gone due to its location.
Well, I was wrong. This place stays pretty busy and the biggest reason for their success is their salsa. It is a avocado salsa that is not only refreshing, but also unforgettable.
This is my version of their salsa.
I love its creamy texture from the avocado. You can literally make this salsa in less than 10 minutes. Serve this salsa with tortilla chips and you have a huge hit!
Creamy Avocado Salsa
Ingredients
- 1 10 oz. can of Rotel with green chilies, lime and cilantro
- 4 ripe avocados peeled and cored
- 2 tbsp. of cilantro
- 1 tsp. of salt
- 1/2 tsp. of cumin
- 1/2 tsp. of oregano
- 1/2 tsp. of paprika
Instructions
- Add all the above ingredients into a food processor and blend until the mixture is smooth and creamy.
- Serve with tortilla chips.
