Oatmeal Sandwich Cookies
You'll love these two chewy oatmeal sandwich cookies with a fluffy filling. A family favorite cookie recipe! Fun to make, fun to eat, a tasty lunchbox treat and popular bake sale dessert too!
- 1 1/2 cup Shortening
- 2 cups Flour
- 1 teaspoon Salt
- 1/2 teaspoon Nutmeg
- 2 teaspoons Vanilla
- 2 teaspoons Cinnamon
- 4 Eggs
- 3 cups Brown Sugar
- 1 12 teaspoons Baking Soda
- 4 cups Quick Oats
- 8 ounces Cream Cheese softened
- 1/4 cup Butter softened
- 2-1/2 cups Confectioner Sugar
- 1 teaspoon Vanilla Extract
Preheat oven to 350°.
Cream shortening and brown sugar until light and fluffy.
Beat in eggs and vanilla.
In another bowl, whisk the next ingredients; gradually beat into creamed mixture.
Stir in oats.
Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets.
Bake until golden brown, 8-10 minutes.
Remove to wire racks to cool.
Combine and mix until creamy and soft.
Spread filling on the bottoms of half of cooled cookies; cover with remaining cookies.
