1 1/2cupShortening
2cupsFlour
1teaspoonSalt
1/2teaspoonNutmeg
2teaspoonsVanilla
2teaspoonsCinnamon
4Eggs
3cupsBrown Sugar
1 12teaspoonsBaking Soda
4cupsQuick Oats
Filling
8ouncesCream Cheesesoftened
1/4cupButtersoftened
2-1/2cupsConfectioner Sugar
1teaspoonVanilla Extract

Preheat oven to 350°.
Cream shortening and brown sugar until light and fluffy.
Beat in eggs and vanilla.
In another bowl, whisk the next ingredients; gradually beat into creamed mixture.
Stir in oats.
Drop by rounded teaspoonfuls 2 in. apart onto lightly greased baking sheets.
Bake until golden brown, 8-10 minutes.
Remove to wire racks to cool.
Filling
Combine and mix until creamy and soft.
Spread filling on the bottoms of half of cooled cookies; cover with remaining cookies.
