Ritz Dipped Cheesecake Cups

I love the holidays!  Family, food, the spirit of Christ/Christmas in the air and DESSERT!! Our most fav part (;  We were experimenting with cheesecake cups and thought a fun CRUNCH was just what a cheesecake needed.  How about a white chocolate and milk chocolate dipped Ritz crust?  Well we tried it and loved it!  Hope you love our newly invented Ritz Dipped Cheesecake Cups, perfect for neighbor gifts, neighbor treats, Christmas dessert, etc!

These are so easy to make and you probably have everything on hand!  Best!  Here’s the print-friendly recipe!

Ritz Dipped Cheesecake Cups

Ritz crackers dipped in white chocolate and milk chocolate then layered with a creamy cheesecake topping.

Ingredients
  • 1 sleeve Ritz crackers
  • ½ cup white chocolate chips
  • ½ cup milk chocolate chips
  • 16 oz cream cheese
  • ½ sugar
  • 1 teaspoon vanilla
  • 2 tablespoons butter
Instructions
  1. Crust:
  2. Melt both chip flavors in double broiler together.
  3. (Optional: microwave the chips)
  4. Coat Ritz in chocolate, set on wax paper, then refrigerate while you mix the cheesecake filling.
  5. Filling:
  6. Mix all wet ingredients together with a mixer until smooth.
  7. Combine:
  8. Place hardened chocolate crackers into cupcake liners.
  9. (Tip: place liners in a cupcake pan to hold their form.)
  10. Spoon generous topping on top of crackers.
  11. Freeze 3 hours or until firm. Serve immediately.

    I’ve made peanut butter between 2 ritz and then dip in white or dark chocolate which are yummy. These Ritz cheesecakes look delicious!! Definately a keeper!!

    Wow, beautiful! I love the ritz at the bottom and the combo of the chocolates. I can’t seem to find white chocolate chips here in the UK though.

    I had to laugh at this, a few months ago I made some strawberry santas with a cheescake style filling (Cream cheese blended with icing sugar) – turn a hollowed out strawberry upside-down, cut off the pointed end, fill with mixture, replace pointed end as Santa’s “hat” and dab with a dot of filling on the tip. Add faces if you like using cake decorations – and had so much of the filling left over I hadn’t a clue how to use it all. Late one night I was hunting for a snack and decided to try taking ritz, adding some of the filling and a few chocolate chips for mini cheesecakes and it was delicious! I only used the four ingredients though and didn’t coat my ritz, but I would imagine they taste rather similar! Glad to note that I wasn’t completely insane for trying it.
