Grilled chicken parmesan #CookClassico

Hope you all had a great weekend!
I celebrated my 11th year of marriage this weekend with my mister and had the most.delicious.meal to celebrate!  Most women want to go out and have a fancy dinner at an expensive restaurant, I know, buuuuuuuut, most couples aren’t married to a man in law enforcement who works a crazy schedule… add 4 gorgeous kids under the age of 10 on top of that and going out this year was almost impossible.  So, I surprised my Valentine’s day dinner date with an amazing dish I found on Classico’s website, grilled chicken parmesan (adapted) and lemme tell ya, it was delish!

I shop at Walmart a lot for groceries and this trip did not disappoint… I purchased all of the ingredients to make this and even snagged a container of fresh parmesan flakes, which tasted SO good with the puree!

Since we’re running in Tough Murder (erm, I mean Tough Mudder) this weekend, we’ve been eating healthier around here so I wanted to create a meal that was tasty AND nutritious so I used Classico’s heavy tomato puree.  See that label?  A la natural, always packed fresh with no preservatives.  Mmm!

I skipped the french bread, although this sauce would have been PERFECT to dip it in (;  I did include my hubby’s favorite drink, cream soda, and it was a great combination with this delicious dish.  He helped himself to seconds, so I know he lovely love loved it!  I have a confession: this is my first time ever making chicken parmesan.  I know!  Where have I been?!  LOL  The hubbs asked me if I made the sauce from scratch because the tomato puree tasted THAT fresh.  Shh!  It will be our little secret, m’kay? (;

What are your favorite plans with your dinner date?  Dining out or eating in?  Well, if you want to eat in and truly enjoy a delicious, nutritious meal at home, here’s the recipe I used to create this tasty dish:
Grilled Chicken Parmesan

A delicious meal using canned tomatoes and other ingredients you’ll most likely already have in your home :)
  • 4 large chicken breast, sliced 1/2 in. slices
  • salt and pepper
  • 1 can (28 oz.) Classico™ Heavy Tomato Puree
  • 2 cups shredded Mozzarella cheese
  • 1/4 cup plain or Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  1. On a large baking sheet, arrange sliced chicken in a single layer.
  2. Sprinkle liberally with salt and pepper on both sides.
  3. Let sit for 15 minutes.
  4. Preheat oven to 350°F and preheat grill pan over high heat.
  5. Grill chicken just long enough to create grill marks on both sides.
  6. Spread half of the tomatoes along the bottom of a 9″x13″ baking pan.
  7. Layer grilled chicken next.
  8. Top chicken with remaining tomato puree and mozzarella cheese.
  9. Cover and bake for 20 minutes or until cheese is melted.
  10. While cooking, combine breadcrumbs and Parmesan cheese.
  11. Remove cover; sprinkle topping evenly over the surface.
  12. Return to oven uncovered and bake until golden brown, about 5-8 minutes.
  13. Enjoy!
