Ritz Dipped Cheesecake Cups

Ritz crackers dipped in white chocolate and milk chocolate then layered with a creamy cheesecake topping.
  • 1 sleeve Ritz crackers
  • ½ cup white chocolate chips
  • ½ cup milk chocolate chips
  • 16 oz cream cheese
  • ½ sugar
  • 1 teaspoon vanilla
  • 2 tablespoons butter
  1. Crust:
  2. Melt both chip flavors in double broiler together.
  3. (Optional: microwave the chips)
  4. Coat Ritz in chocolate, set on wax paper, then refrigerate while you mix the cheesecake filling.
  5. Filling:
  6. Mix all wet ingredients together with a mixer until smooth.
  7. Combine:
  8. Place hardened chocolate crackers into cupcake liners.
  9. (Tip: place liners in a cupcake pan to hold their form.)
  10. Spoon generous topping on top of crackers.
  11. Freeze 3 hours or until firm. Serve immediately.
