Rolo Cookies Recipe

Hello visitors from Pinterest! We’re not typically a recipe blog, just happened upon this amazingness and had to share. Browse our tutorial page to really get to know us (;
I needed to make cookies STAT for my son’s last-day-of-school-party….uh, thanks for the day before notice, son!  I was browsing my “Best of the Best of Utah” cookbook I got from my mother-in-law one year.  I wanted something other than standard chocolate chip cookies.  I came across a recipe called “Crazy Chocolate Caramel Cookies” and started drooling.  ROLO cookie recipe!? Where had this been all my life??  They’re chocolate cake mix cookies with Rolo’s inside, brilliant.  Love this Rolo Cookies Recipe, it’s amazeballs!
Easy ROLO cookies! Chocolate cookies stuffed with Rolo's, amazing! #rolocookie #rolo #cookierecipe
Who thought of these?? Some Mormon genius, I’m sure (; It’s the perfecdt, quick cookie to satisfy an emergency sweet tooth attack for chocolate lovers!
Here’s what you need to make your own:

  • 1 box of chocolate cake mix
  • 1/2 cup oil
  • 2 eggs
  • Rolo candies

Oh so easy directions:

  • Heat to 350.
  • Combine cake mix, oil and eggs. Blend well.
  • Place a Rolo in the center of a piece of cookie dough, fold the dough in a ball around the Rolo.

  • Place on an ungreased cookie sheet 2″ apart.
  • Bake 8-10 minutes.
  • Cool 1 minute and remove from cookie sheet. (Makes 4 dozen cookies)

Love this recipe….I’ll be stocking up and freezing Rolo’s for potlucks, get togethers, etc.  The look like an ordinary chocolate cookie but have a surprise inside, sneaky sneaky!

    What a great idea! You could put just about any mini=candy bar inside, too. Like Snickers! or Reese’s.

    Justine Brent

    Wow this is a quicker way than my rolo recipe! I’m for sure going to try it. Thanks!

    I made these one year for a cookie exchange but did NOT read the directions entirely. I bought those hard caramels and made them and they were delicious. HOWEVER, when they cooled off the middle was hard as a rock! I had no time to remake so I had to include a waiver that no one would sue me if they had to make a trip to the dentist for a broken tooth. We warmed them up with about 10 seconds on the microwave and saved our choppers!

      Haha… oh, I mean OOPS! Darn it! Yes, ROLO’s are the way to go… smooth creamy caramel that doesn’t harden! (; Thanks for sharing your oops!!

    Jeretta

    These look fantastic! And super easy! Can they also be made with a vanilla cake mix?

    Madison

    We tried this recipe and our batter was sticky, wouldn’t even release from mixer beaters. Have we done anything wrong?

    • 33

      lollyjane

      Hi Madison! We’ve never had a problem with it :/ So sorry! Just mix the dry cake mix with the wet ingredients and it should work!!

      Jenn Ellis

      I wouldn’t bother with a mixer. I got in there with my hands after I did what I could with my spoon. My batter was more like a loose sugar cookie dough. Are you sure you used the right amount of oil?

        lollyjane

        I followed the box directions! Mine’s been perfect everytime..so yummers!

    Mary

    I love these! Have you had luck freezing them? Any tips on how to wrap them for freezing or is that unnecessary? Thanks for the recipe.

      lollyjane

      Hi Mary! I actually haven’t froze them, sorry! They don’t last long enough, lol (;
